Does a salad needs to be cold...hell no...This easy but super tasty salad with warm veggies and fried feta cheese can be eaten as a lunch, starter our a main course. The powerful taste of this Greek cheese combines awesome with the grilled veggies like zucchini and paprika. Adding some red onion and black olives making this a salad beloved by many. Ingredients (2 persons) ½ Roman Lettuce 100 gr Feta Cheese 1 Paprika ½ Zucchini 1 Tomato ¼ Cucumber 2 tsp Fried Onion 2 tbsp Olive Oil Salt and Pepper 2 Eggs 2 tbsp Flour Breadcrumbs 1 Lemon 1 Red Onion Some Olives Equipment Fry Pan Cutting Board Grill Pan Preparation 1. Wash and slice the lettuce. 2. Wash and dice the tomato and the cucumber. 3. Cut the feta in 4 pieces, stir the egg in a bowl, get the feta through the flour, then through the egg and finally the breadcrumbs. 4. Slice the zucchini and paprika in rather big chunks, sprinkle with some olive oil, pepper, salt and grill. 5. Bake your feta cheese gold brown in the deep fryer. 6. Put the sliced salad , tomato, cucumber on a plate, sprinkle some olive oil and lemon juice of 1/2 lemon over it, serve the other part of lemon on the side. 7. Add the grilled zucchini and paprika. 8. Slice the red onion in rings and add together with the olives to the salad. 9. Clean and chop 2 cloves of garlic and add to the blender. 5. Add the 3/4 cup of yogurt, 1/4 cup water, the skyr, and squeeze out half a lemon into the blender, season with freshly ground black pepper and salt. 6. Blend until it becomes a smooth creamy structure. 7. Chop the 2 scallions and the mint, add to the blender and blend again. 8. Take a taste and add salt or pepper if needed. 9. - Herb Salad with Avocado and Grilled Tuna
Ingredients (2 Persons) Mixed Salad 350 gr Tuna Steak 50 ml Olive Oil Fresh Basil Pepper ½ Lemon Fresh Parsley Sea Salt 10 Parts of Sun-Dried Tomato Fresh Chives 1 Tomato 1/5 Cucumber 1 Avocado Equipment 1 Grill Pan 1 Salad Bowl Preparation 1. Wash the salad sorts of choice, the tomato, the cucumber and the herbs. 2. Put the salad in a bowl. 3. Chop the different herbs and add to the bowl. 4. Season the tuna steaks with pepper (I prefer white pepper, freshly ground). 5. Put the grill pan on the stove to let it heat. 6. Meanwhile cut in cubes the cucumber, the sun-dried tomatoes, the tomato and the avocado and add to the salad bowl. 7. Put the tuna steaks in the grill pan. 8. While one side of the tuna steak cooks, divide the mixed salad on two plates and sprinkle with some lemon juice and the olive oil. 9. Turn over the tuna and grill the other side (tuna should be handled as a steak, I prefer it rare, but medium rare or medium is also okay, please don’t serve it well done cause the tuna will get too dry). Consider a 2 minutes cooking time per side. 10. Put the tuna steak on top of the salad and season with some sea-salt. 11. Serve with some ciabatta or focaccia. TIP: For garnishing keep some tomato cubes separated or my favorite, add some different colored cherry tomatoes. Roast your pine seeds until gold. 2. Put the basil, pine seeds, Parmesan, and garlic in your food processor 3. Add the olive oil. 4. Season with salt and pepper according to taste. 5. - Stuffed Bell Peppers with Minced Meat
Ingredients (2 Persons) 2 big red Bell Peppers 2 Onions 1 tbsp Paprika powder 1 can (70 gr) concentrated Tomato Paste 8 Cherry Tomato 2 tsp Salt 1 tsp Pepper 2 tsp ground Oregano 500 gr minced Beef 12 Basil leaves 1 Garlic clove 1 tbsp Olive Oil ½ Zucchini 200 gr Tagliatelle (or other pasta) Equipment 1 Cutting Board 1 Knife 2 Pan Oven Oven tray Preparation 1. Pre-heat the oven to 180 degrees. 2. Dice the onion and start cooking in a pan with the olive oil until glazed, meanwhile chop the garlic. 3. Add the tomato paste and cook for a minute, add the minced beef, the garlic, the paprika powder, oregano, salt and pepper. 4. Stir fry until the beef is done (around 15 min) 5. Cut the zucchini in small dices and add it to pot, cook for 1 more minute. 6. Wash and remove the top of your bell peppers and remove the seeds. 7. Fill up the bell peppers with the cooked beef, put the top on again and place in an oiled oven tray. 8. Put the stuffed bell peppers in the oven for about 30 minutes. 9. Meanwhile take a cooking pot with water, salt and a tsp olive oil and cook your pasta al dente. 10. Soon as the pasta is done mix it with some olive oil, fresh chopped basil, some cut in half cherry tomatoes and season with salt and pepper. 11. Ingredients (2 Persons) 2 Kg Mussels ½ Green Celery chopped 4 White Onions in rings 2 tsp White Pepper 1 tsp Salt 60 gr Butter 600 ml Water Equipment 1 Cutting Board 1 Knife 1 Large Pot with top Preparation 1. Wash the mussels in cold water. 2. With a good knife remove all the white dots and dirt from the mussels. TIP: A good mussel should be sealed tight or at least seal itself when you hit it with the knife. 3. Second thing to watch is to carefully remove, if there, the ‘beard’ of the mussel which sometimes you find at the side of the mussel, cut this away. 4. Now take fresh water and wash the mussels again. 5. Take the pot, add the butter, water, chopped celery, sliced onions, the pepper, and salt, and put the mussels on top. 6. Put the top on the pot and put on a high fire. 7. After 3 minutes shake them up until your veggies are on top, put back on the fire for 2 minutes. 8. Shake up again, cook for 2 more minutes and shake up again before serving. 9. If you check the mussels, they should all be opened, if not cook for a minute longer till they open up. TIP: When all opened, they are ready to serve. 10. Ingredients · 200 gr Feta Cheese · 1/6 Paprika · 1 tbsp fresh Oregano (or 1/4 tsp if dried) · 4 Cherry Tomato · 1/3 red onion · 5 Black Olives · 1 tbsp Olive Oil Equipment · Oven · Cutting board Preparation 1. First step is pre-heat the oven to 220 degrees. 2. Put a drop of olive oil in a small baking tray or a heat resistant plate, put the feta cheese on top and sprinkle with the oregano. 3. Put your garnish like the red onion, some paprika, the tomato, olives around and a bit on top of your feta cheese. 4. Sprinkle some olive oil over it and put in the oven for about 15-20 minutes. 5. Ingredients (4 large pancakes) 500 gr Chicken Breast ½ Iceberg Lettuce 2 Tomatoes 1/4 Cucumber 2 tbsp Cumin 1 tsp Salt 1 tsp Pepper 100 ml low-fat Yoghurt 1/4 Lemon 4 tbsp Chopped Chives 2 tbsp Chopped Parsley 2 eggs 250 gr all-purpose Flour 500 ml low-fat Milk 4 tsp Sunflower Oil 1 Red Onion 1 tsp Paprika powder 1 clove Garlic Equipment Coated pan Medium bowl Mixer Instructions 1. To prepare the pancakes use the 500 ml of low-fat milk, add the eggs, a little salt and pepper, 1 tbsp chopped parsley and 2 tbsp chopped chives, stir it up for 3 minutes 2. Add the flour and put in the mixer to get it blended really well and obtain a fresh green color. 3. Cook 4 pancakes in a large coated pan using some sunflower oil to fry. 4. Put the pancakes aside to cool down. 5. Wash and slice the lettuce, peel and dice the cucumber, wash and dice the tomato. 6. Dice the chicken breast and fry them, season with the cumin, salt and pepper and the paprika powder. 7. Mix the yogurt with the chopped garlic, 2 tbsp of chopped chives and 1 tbsp chopped parsley, season with some salt and pepper and squeeze the 1/4 of a lemon. 8. For the final step, place the pancake on a plate and put in a long way, almost at the middle point some salad with some cucumber and tomato, add the fried chicken, and finish with some yogurt-dressing. 9. Ingredients (2 Persons) 1.6 kg Spareribs 1 tsp Salt 1 tsp White Pepper 1 tsp Paprika powder ¼ tsp Cayenne ¼ tsp Cumin 2 tbsp Olive oil 1 tsp Oregano 1 tbsp Sea salt 2 clove Garlic 1 tsp Thyme Equipment Oven Aluminium foil 1 Baking tray Preparation 1. Mix all spices with the olive oil, rub the spareribs with this mix and what I prefer, wrap them in plastic foil and leave them in the fridge overnight. 2. Day after take the ribs out of the plastic and put them in aluminium foil, put the sides of the foil up and add a little water and olive oil, close the foil but leave some room to get a steam effect later. 3. Put the Spareribs in the oven around 150 degrees and leave them slow cooking for 2 and a half hours. 4. Take out the ribs, open the foil carefully, the steam can burn your hands, turn the oven up to 180 degrees and cook for about 15-20 minutes. TIP: It’s a long cooking process but I guarantee you guys the meat will fall of the bone like butter. Ingredients (2 Persons) 100 gr Serrano Ham 150 gr Rocket salad ½ Cucumber 15 Sun-dried Tomatoes 1 tbsp sun-dried tomatoes oil 2 Mozzarella balls 2 tbsp Olive Oil ½ tsp Sea Salt 2 twists of fresh grounded pepper 1 cup Mixed colors Cherry Tomatoes Parmesan flakes Small Bouquet of Fresh Basil Equipment Cutting board Knife Preparation 1. Slice the cherry tomatoes in half, chop the sun-dried tomatoes, peel and dice the cucumber and mix them all together in a bowl. 2. Dice the mozzarella and add to the tomato mix, add the olive oil, the twists of pepper and the sea salt. 3. Chop the basil and add to the mix as well. 4. Put the rocket salad in ice water for some minutes and drain the water. Drip dry on a paper towel. 5. Take a big bowl and gently mix the salad and the tomato-mozzarella mix, divide into two salad bowls or plates. 6. Slice the Serrano ham and divide over the two salads, top off with some Parmesan flakes and some fresh basil leaves 7. If needed you can add some olive oil on top.
