Salad with Basil, Tomatoes, Serrano Ham, Sun Dried Tomatoes and Mozzarella


 


Ingredients (2 Persons)

  • 100 gr Serrano Ham

  • 150 gr Rocket salad

  • ½ Cucumber

  • 15 Sun-dried Tomatoes

  • 1 tbsp sun-dried tomatoes oil

  • 2 Mozzarella balls

  • 2 tbsp Olive Oil

  • ½ tsp Sea Salt

  • 2 twists of fresh grounded pepper

  • 1 cup Mixed colors Cherry Tomatoes

  • Parmesan flakes

  • Small Bouquet of Fresh Basil

Equipment

  • Cutting board

  • Knife

Preparation


1. Slice the cherry tomatoes in half, chop the sun-dried tomatoes, peel and dice the cucumber and mix them all together in a bowl.


2. Dice the mozzarella and add to the tomato mix, add the olive oil, the twists of pepper and the sea salt.


3. Chop the basil and add to the mix as well.


4. Put the rocket salad in ice water for some minutes and drain the water. Drip dry on a paper towel.


5. Take a big bowl and gently mix the salad and the tomato-mozzarella mix, divide into two salad bowls or plates.


6. Slice the Serrano ham and divide over the two salads, top off with some Parmesan flakes and some fresh basil leaves


7. If needed you can add some olive oil on top.

 

TIP: Adding balsamic cream or vinegar could kill some of the flavors on the salad, cherry tomato will give enough freshness to the salad for my personal taste, but you can always play around with the recipes and tune to your personal taste.
