Potato Surprise - Mashed Potato Recipe


 

As a follow up on the festive garnishing we’ve recently post we post this festive looking potato bags. A great way to give a special touch to mashed potatoes and same as with the other garnishing this is one that can be easily prepared in advance. Only things you need beside your mashed potatoes is a package of spring rolls pastry (or phyllo dough) and a leek to create a "rope" and I promise these festive looking bags will surprise your guests. Hope you’ll try them out and enjoy them!

Ingredients

  • Mashed potatoes

  • Spring roll pastry or phyllo dough

  • Leek (green part)


Equipment

  • Oven tray

  • Oven









Preparation



1. Cut some thin long slices of the green from the leek making long ‘strings’ and put in a bowl or cooking pot, add some boiling water and leave it in the hot water for about 3-5 minutes, this way it softens up a bit but stays strong enough to use later.


2. Take out and put aside. (if possible put it 1minute in ice water, not needed but the color stays greener)


3. Take out your spring rolls pastry, phyllo dough or if you can get your hands on it, a ‘brique’ dough (it’s a French dough what is really thin, like a phyllo dough), I’ve chosen to tell you guys to work with some spring roll pastry here cause it’s easier to handle and doesn’t break that easy, the other pastry is a bit thinner.


4. Open up a square of the pastry (20 cm on 20 cm)


5. Scoop a ball of cold mashed potatoes in the middle


6. Fold the pastry together working from one side to the other


7. Take a string of leek to hold it together and carefully lay a knot in it.


8. Place on a sheet of baking paper and bake for 15minutes in the oven.



 

TIP: You can perfectly prepare these bags in advance, just cover them well with cling film so the pastry doesn’t dry out.

Ingredients

  • 1 kg potatoes

  • 75 gr butter

  • 1 egg

  • 1 egg yolk

  • salt & pepper


Preparation


1. Peel and cook the potatoes in boiling water till done


2. Mash the cooked potatoes and add the butter, the egg, the yolk and salt and pepper to taste


3. Mix everything together thoroughly.


4. Let the mix cool down
