Ingredients (4 Persons)
3 Cucumbers
1/2 Lemon squeezed
1/2 cup of Mint
3/4 cup Yogurt
1/4 cup Water
2 tbsp Skyr
2 cloves Garlic
2 Scallions
Fresh ground Salt and Pepper

1 Cutting board
1 knife
1 blender
Preparation
1. Start peeling the cucumber.
2. Slice the peeled cucumber open in the long way and use a small teaspoon to remove the cucumber seeds.

3. Chop the seedless cucumbers and put into the blender.
4. Clean and chop 2 cloves of garlic and add to the blender.
5. Add the 3/4 cup of yogurt, 1/4 cup water, the skyr, and squeeze out half a lemon into the blender, season with freshly ground black pepper and salt.
6. Blend until it becomes a smooth creamy structure.
7. Chop the 2 scallions and the mint, add to the blender and blend again.
8. Take a taste and add salt or pepper if needed.
9. Put away in the fridge to serve it really cold.
10. Garnish with some cucumber, mint and if you like some lemon zest.
11. Serve with some crunchy grilled bread
