Blueberry Christmas Tree Cake


 

This Christmas Blueberry Tree Cake is a delicious blueberry yoghurt cake topped with a layer of butter cream and edible paper snowflakes baked in a Christmas tree shaped mold. As I think it’s always nice to have some Christmas shapes on the table around this time a year. Hope you’ll try it out enjoy it!

Ingredients

  • 125 gr blueberries

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • 1 tsp baking powder

  • ¼ tsp salt

  • 200 gr sugar

  • 200 gr greek yoghurt

  • 150 ml sunflower oil

  • 200 gr all purpose flour


Equipment

  • 2 bowls

  • Oven

  • Cake mold (20cm)





Preparation


1. Pre-heat the oven to 180 °C degrees.


2. Mix all dry ingredients except the sugar and 20 gr of the flour in one bowl, (meaning 180gr flour, salt, baking soda and the baking powder).


3. Mix the eggs with the yoghurt, the sunflower oil, vanilla and the sugar in another bowl.


4. Add the dry ingredients to the wet ingredients and mix well.


5. Wash the blueberries under cold water and stir the 20 gr of flour we saved over them, this gives them a little coating so they don’t sink to the bottom of the dough.


6. Mix these blueberries gentle under our dough.


7. Butter and flour your cake mold, we used a Christmas tree mold but a round mold of 20 cm works as well.


8. Add the dough and place in the oven for about 50 minutes.


9. Take a wooden toothpick to check in the center if your cake is totally done, if there is no raw dough sticking to the wood the cake should be ready.


10. Cool down on a raster.


For this version we used some butter cream to garnish and some bought snow flakes, the butter cream is made by simply mixing 100 gr of butter with 100 gr of powder sugar, garnish further as you like with some fresh blueberries or Christmas decorations.
